What exactly is the difference? Does EasyBackup only backup changes made or the entire folder structure?

I am looking to use GBridge as a method of creating an offsite backup of my work documents. Essentially, my office computer backs up to my home computer. I am concerned about bandwidth and only want files that are new at my office computer copied to my home computer. Which service should I by using?

EasyBackup = SecureShare + AutoSync.

EasyBackup is basically a wizard that helps you to setup a SecureShare and a AutoSync. The biggest difference is that you can setup an AutoSync on the backup-destination remotely, so you can 'push' some data to a remote computer.

Is it possible to have EasyBackup set a destination to an NAS on my home network?

If you can mount the NAS as one of your windows' pc's drive, you can specify the net drive as the autobackup destination.
